How to Make Your Own Healthy Rainbow Popsicles

It’s sweet summer-time and you know what that means, time for some beloved popsicles! Buying popsicles from the store is a fun, quick, easy treat, but did you know that you can make your own healthy rainbow popsicles at home with some simple ingredients? Include the kids and have them help make these fruit-filled, summertime treats!

Healthy Rainbow Popsicle Recipe

yields 15 + popsicles | additional time: 1 day | total time: 1 day

 Total Ingredients

  • 5 frozen bananas
  • 1 3/4 cup greek yogurt
  • 1/4 cup of frozen raspberries
  • 1/2 cup of frozen strawberries
  • 1/4 cup of frozen peaches
  • 1 small orange
  • 1/8 cup of frozen mango
  • 1 1/2 cup of frozen pineapple
  • 1 handful of spinach
  • Blue food coloring
  • 1/2 cup of mixed berries
  • 1/4 cup sliced canned beets
  • Water or liquid for blending

Ingredient Breakdown For Each Color

Red Color:

  •  1/2 frozen banana
  •  1/4 cup greek yogurt, vanilla or plain
  •  1/4 cup frozen raspberries
  •  1/4 cup frozen strawberries
  •  water or liquid for blending

Orange Color:

  • 1/2 frozen banana
  •  1/4 cup greek yogurt, vanilla or plain
  •  1/4 cup frozen peaches
  •  1 small orange
  •  1/8 cup frozen mango
  •  water or liquid for blending

Yellow Color:

  •  1 frozen banana
  •  1/4 cup greek yogurt, vanilla or plain
  •  1/2 cup frozen pineapple
  •  water or liquid for blending

Green Color:

  • 1 frozen banana
  •  1/4 cup greek yogurt, vanilla or plain
  •  1 handful of spinach
  •  1/2 cup frozen pineapple
  •  water or liquid for blending

Blue Color:

  • 1 frozen banana
  •  1/4 cup greek yogurt, vanilla or plain
  •  1/2 cup frozen pineapple
  •  a small amount of blue food coloring
  •  water or liquid for blending

Purple Color

  •  1/2 frozen banana
  •  1/4 cup greek yogurt, vanilla or plain
  •  1/2 cup frozen mixed berries
  •  water or liquid for blending

Magenta Color:

  •  1/2 frozen banana
  •  1/4 cup greek yogurt, vanilla or plain
  •  1/4 cup sliced canned beets
  •  1/2 cup frozen strawberries

Instructions

Making Each Color

  1. Place all the ingredients in a blender and blend until smooth. If it’s too thick, add some more liquid.
  2. Transfer the smoothie to a bowl or container, rinse the blender and prep the next color.

Assembling the Healthy Rainbow Popsicles

  1. Find a popsicle mold big enough to hold 15 popsicles or multiple molds that fit up to 15 popsicles.
  2. Begin layering the colors. Use a spoon to scoop each color into the mold (s). (Using a spoon instead of pouring it into the mold will make it easier for the colors to blend naturally.)
  3. Once the molds are filled and ready, add sticks and freeze the popsicles overnight.

Getting the Healthy Rainbow Popsicles From the Mold

  1. To get the popsicles free from the mold, fill your kitchen sink with room temperature water. Place the mold in the water, making sure the water does not go above the top of the mold. Allow the mold to sit for a few seconds.
  2. Start to wiggle a popsicle back and forth. If it’s still a challenge to get the popsicle out, put them back in the water for a few more seconds.
  3. Last, but not least, enjoy your healthy homemade rainbow popsicles!

Legacy Scholarship

We are proud to unveil our new Legacy School Scholarship Program. Students who attend Legacy from 1st-6th grade are eligible for a $500 scholarship towards higher learning. This scholarship can be used for college or trade school upon graduation from high school. With that said, we are very excited to give back to our students as we know each child has the potential to succeed at whatever goal they set for themselves.
